Corn Allergy Symptoms and Avoidance
Corn allergy is difficult to pinpoint because corn is contained in so many foods and other products. Symptoms of corn allergy can be as severe and reactions will vary from person to person. Traditional allergic reactions include:
- Anaphylaxis
- Asthma and/or shortness-of-breath
- Breathing and/or swallowing difficulties
- Drop in blood pressure
- Stomach cramps, discomfort, pain, diarrhea, nausea and/or vomiting
- Migraine headaches
- Hives or rashes
- Throat face or tongue swelling or tingling.
Corn allergic people must remove all corn and corn derived products from their diet. The allergen in corn that effects most people is found in the protein of the corn, not in its oil.. Corn oil can be tolerated by most corn allergic people.
Foods That Contain Corn
Foods such as corn chips, corn flakes, or corn tortillas are obvious and easy to avoid. However, many processed foods are made with corn syrup, corn starch, and / or corn meal.
Many processed foods contain a corn derivative as a sweetner or to change the texture of the finished product. Packaged cereals, pasta sauces, canned soups, peanut butter, processed cheeses and meats are but a few examples. Read food labels, you may be surprised (unpleasantly) with what you find.
Be especially alert for the terms "carmel", "dextrose" (aka "glucose" or "corn sugar"), "maltodextrin", or "malt syrup" on product labels because they may also contain corn. Corn syrup is a common sweetner used in baked goods, ice cream, candy, soft drinks, and a bunch of other junk your mother would not want you to eat.
Other Products That Contain Corn
The use of corn derivatives is not limited to food products. Products as diverse as tooth paste, emollient creams, plastic wrap, paper cups and paper plates may all contain ingredients derived from corn. Certain medications, including common over the counter remedies, contain a corn product. Bath powders, laxtives, vitamins, aspirin, lozenges, ointments, etc. may contain either corn starch and / or corn syrup.
